The motivation for this requirement is that a certain version of QGC only works on specific px4 firmware, and an error will be reported if the version is different. This software is very version sensitive.
You can run old versions by downgrading Downgrading | Flathub Documentation
But I think flathub will only ever store some of the latest versions, so you might be out of luck.
